I don't really have the ability to ferment at 50, but could ferment in the low 60's.

Was wondering about brewing a Bo-Pils recipe, but using Kolsch yeast? I have brewed a few Kolsch and they turn out fairly crisp.

Has anyone done this?
 
I think that is pretty much what a kolsh is? A kolsch with %100 pils and saaz would be great. If you are going for a very clean brew, I would suggest 1007, as the kolsch strains all lend their fruity edge to the brews. There will be no mistaking any brew made with kolsch yeast for a pilsener. If you overpitch 1007 (german ale), ferment in the 50's , clear the yeast and lager it....you may have a chance.

Well, I have Kolsch yeast at home so that's what I'm going to use. I'm thinking:

95% Pislner
5% Carapils

30-35 IBU's with Saaz

I'm not too worried about the fruitiness, as long as it's crisp/hoppy.
 
I did a SMaSH w/ 100% German Pils and Saaz hops to 32 ibu in 4 additions and WLP029. Tasting notes from by book state: "Just like a good german pilsner except with the Kolsch yeast influence".

I mashed at 148 single infusion, boiled 90 mins and fermented in the 65-70 range due to the lack of fermentation control at the time.

Overall, good experiment that made a great beer.
 
Yes, it came out very good. One of my best beers ever and it was extract too. I think 6# DME and 4 Saaz hop adds to 40-45 IBU. 2 gallon boil and top off with cool water.

I used Wyeast Kolsch and fermented around 60. It didn't come out that clear, but it was great.

Sounds exactly like a Kolsch to me. Keep those IBUs under 30 to stay on-style, and use German noble hops (not Czech). Don't forget to boil for 90 minutes.
