Anyone have a all grain clone recipe. I had 1 on tap last night and really enjoyed it.
 
Has anybody tried brewing this clone? When I put it into beersmith with only the 3.3 lbs of LME the gravity is way off (1.041). Does anyone have any other recipes for this? I tried reaching out the brewery, but didn't get a response.

I plan on trying my hand at an AG version of this, but I was hoping for a bit more guidance before I dove in.
 
Well they list the grains and hops but no amounts or hop schedule.

Hops: Mt. Hood, Cascade, Willamette
Malts: Pale, Crystal, Torrified Wheat, Roasted Barley, Chocolate
 
So I'm thinking maybe 7 lbs Maris otter
.5 c 60?
.5 wheat
.25 roasted barley
.25 chocolate malt
1 oz mt. hood @ 60
.5 Willamette @20
.5 cascade @ 0

My efficiency was down a bit for some reason (69% vs 72% predicted) so I missed my OG by a bit 1.049 vs 1.054 estimated. However, I think this will actually put me closer to the 4.3% of Pig's Ear.

I took a guess at the hop schedule. I read an article somewhere (BYO maybe?) that talked about mixing Mt Hood and Cascade for bittering in Brown ales, so I figured I would give it a shot.

I'll let you know how it turns out!

Just wondering how the clone is going.
 
The first taste was really good. The beer finished a bit lower than I expected at 1.009 (estimated 1.016). So it will likely be a bit drier than Pig's Ear. I also noticed the roasted grains really coming through on the backend, so maybe I would scale those back a tiny bit next time. I'm carbing it up now, and have 1 Pig's Ear left in my fridge to try a back to back taste test after it's fully carbed. I'll post again with how it compares.
 
Thanks for the update. I'm going o be brewing in a couple of weeks. I going to give one a go. I will probably adjust the recipe on your final tasting notes.
 
It's not fully carbed, but I tried the back to back taste test anyway. I definitely went too heavy on the specialty grains. I think either the chocolate malt or the brown, but not both. In fact, I really don't taste any hint of chocolate in Pig's Ear, so I'm inclined to just stick with the brown next time. The chocolate/roast flavor of mine overpowers the bitterness/aroma from the hops. It's not bad, it just tastes more like a porter than Pig's Ear.

Overall I would say scale back the specialty grains. Remove either the chocolate or the brown Malt, and lower the crystal a bit (.5 lbs instead of .75 maybe?). Hard to tell on the hop schedule corrections. I get a stronger aroma from Pig's Ear, so maybe more late addition Mt. Hood to give it help on the nose.
