I just set up my Spike EHERMS system and began to auto-tune my HLT PID. The instructions say to heat the water to 150 and then begin the auto-tune process. I was distracted and the water hit 160, no big deal Im thinking. It is now over 7 hours later and the ATU light on the PID is still blinking as if it is still going through the process. The water started at 160 and is just slowly losing temp and is now at 107. Is this how the auto-tune process works? Any ideas? Might just have to start over.

The 160 instead of 150 might have actually been a big deal. I would try starting auto-tune all over, and this time make sure you start at 150.

No that is not correct. I would start over again. Tune at 150 or 160 it will make no difference but you want to be doing it at the most common or average process value.
