PID controlled Nichrome resistor wire - can it be done?

Hello,
i plan to make an oven using this kind of resistor wire as a heat source http://www.ebay.com.au/itm/30Meter-...05?pt=LH_DefaultDomain_15&hash=item463d943e6d . I will use this for curing sausages/meats and for making speciality malts (crystal, caramel, chocololate, etc).
I want to use a PID SSR controller for temperature control, but i don't know if the nichrome wire can witsand the on/off cycles that the PID will give. Do any of you know if this is posible to make?
Would a simpler thermostat controller be better? I think i will loose the precision of the temperature control this way.
 
For what it's worth, I use a box mod for vaping and use NiChrome wire for making my coils. It can certainly handle the on/off cycles. My box mod is temperature controlled and I run it at about 500* F. It's pretty durable stuff.
