As far as personalizing your own yeast strain goes, I would go with what was said on here earlier and use a generic strain (US-05, WLP001, or an English strain) and brew with it until it gets a "house" condition to it. Once it does just blend it with the origin strain again until you start getting a feel for what it's giving you.
