Looking to make a chocolate peppermint stout for the wifey.

I want to use peppermint extract but not sure:

1. Add to secondary?
2. How much?

5.50 gallons post boil.

I made a spruce pils last year and had fresh spruce tips in the boil. It had some spruce flavor but not a ton so I resorted to spruce essence at kegging. What I did prior to that was a test with a small ml syringe any in bev light beer(miller light, bud light). Divide four to three cups at 3 to four oz and start small addition to larger addition per ml of the peppermint extract. Do as many test as possible to find desired amount and then do the math to convert to five gallons.

The directions on my spruce extract say to add the whole bottle. In retrospect I am glad I did the test because I would have ended up with a car freshner beer instead of a spruce pils.

I agree add at kegging or to bottling bucket. Start with just a little and tast stop adding when you get the flavor you are looking for.
