I have a 1lb bag of pectic enzyme. It is still sealed in its bag. And the bag is in another bag that is air tight. It was moved out side into a storage shed for some reason.....an old hog barn.

I have no dout it is air tight.

Can heat and cold kill/ruin it? Im guessing it has been 2 or 3 years out there. Dont ask me who or why it went out there.... I have no clue.

The stuff I bought said to store it in the fridge and use it up within a couple months. I found this on EC Kraus' website, "Pectic enzyme loses about 10% of it's activity level every month at normal room temperature. - See more at: http://www.eckraus.com/blog/why-do-wine-recipes-call-for-pectic-enzyme#sthash.bhuuaAKv.dpuf"

So my guess is it's no good.

dang. that borke my heart. I will trash 1 full unused lb of it when I get home :(

Test for effectiveness before tossing. Add some to jelly and see if it disolves the pectin, leaving the jelly as juice.
You may just need to use a little more then normel. I don't store mine in the fridge and have it over a year. It still works fine.

OP, did you ever try testing it per jensmith's recommendation? I have a little leftover from the pack I bought. I think it might be expired so just curious if you gave it a try.

No...it was too late. I had tossed it :(

Sorry, you did, never toss until you've tried and tested. Even if only for "scientific research" purposes. In that light, expiration dates mean very little to me, and many are a good source of laughter.

I have been using the same pectic enzyme for nearly 2 years. Never even thought to question if it expires.
