Has anyone tried brewing hard cider with peaches? The raspberry and blackberry do well. Not to sure about peaches. I noticed they have malic acid and citric acid will that effect the fermintation process?

Thanks,
Tom

Peaches can be difficult to work with in the sense that the flavor tends to ferment out. I've had best results when allowing little, if any, fermentation of the peaches. Raspberries, cherries, and such stand up better to fermentation.

There is acid in peaches, but there is acid in apples, and raspberries too. You usually don't have to worry unless you get into citrus and other high acid fruits.

Haven't tried it yet but next week i'm doing a 1g batch of peach using some peach juice i bought from Publix,i love peaches so hopefully it will turn out good. If you try this please post up your results.

Early on in my fermenting career I made some simple peach cardamom cyser with peaches in primary. After a year it was delicious with subtle peach notes.

A friend made a peach cider. He used peaches and apples. It came in at 13% so he considered it almost a wine. To date it was the best cider I have ever had. This summer I plan to attempt to replicate it with his help.

if you replicated it and it turned out... please share. I know this was over seven years ago so it's a stretch to even ask :)
