I've never done cider but decided to give it a whirl. Grabbed a half gallon of peach cider from the orchard and got it going tonight. I used a hybrid recipe from the BYO cider recipe issue.

The cider was all peach and no apples, was pasteurized, and had no sorbates.

.5 gal Peach Cider
OG 1.079
71B yeast
75g sugar
1/2 tsp pectic enzyme
1/2 tsp yeast nutrient

What do you think?

Sounds great and I will be on the lookout for peach cider as a result. My only question is why sugar? At a 1.079 OG, your alcohol potential is pretty high, I believe. I figure you could put an ale yeast, nutrient, pec taste and an airlock in a bottle with your cider and get some wonderful beverage. Anxious to know how it turns out.
 
YOu need to go get another half gallon of peach cider to add to your jug, no point in keeping the jug half empty after the initial rapid fermentation and it will help keep it from oxidizing. WVMJ
 
So the OG was with the sugar added. I think it was around 1.050 without. Since this was a test batch I decided to ferment in the 1 gallon and rack to the 1/2 gallon bottle for cold crashing and drinking. Had to back sweeten though as it dropped pretty low and was pretty dry. Overall, I was happy with the results.

If it's not racked.. no oxidation.. CO2 cloud above it.:mug:
 
It's an old thread revived, but I've done a similar peach cider. I started with a gallon of Peach Cider and fermented it straight up. After it was done, it just seemed to lack a little body and was pretty tart so I pitched it in with 2 gallons of straight apple juice and let it ferment again. With the AJ addition it rounded out really nice and had a really bright peach aroma with a mellow peach flavor. I'd make it again, but I haven't been able to get more of the peach stuff this year.
 
I was on a business trip in North Carolina and found it at a roadside stand. Abbott's Farm sells a peach cider, but it's got some apple juice blended with it. I would check out some local orchards to see if they carry it. Might be a little late in the season this year though, I don't know if orchards cold store peaches or not.
