Today I made a Sierra Nevada Pale Ale Clone (partial grain/extract). When i finished brewing I transferred the wort after straining it to my bottling bucket and adding additional distilled water to bring volume up to 5 gallons. I added the yeast before transferring to 5 gallon glass carboy. (i have always done it this way and works for me). Anyway, i had some left over yeast and i added to the carboy and washed the neck with distilled water and put the blow off tube on and set the carboy in the closet for fermentation. While cleaning up I noticed my gallon jug of 1 step no rinse cleanser was "right there"! Nearest I can figure is I added 5 ++ ounces of sanitizer to my wort by mistake. I always make a gallon of sanitizer and use a spray bottle as needed. I had 3 gallons of distilled water in similar gallon jugs and grabbed the wrong jug by mistake. So, i am thinking i ruined the beer?? Any thoughts?
Alway, pay attention to what you are doing and where your equipment and cleaning supplies are. my excuse, I was in a hurry to finish up and get cleaned up so that I could take care of other family business since it is Saturday. poor excuse but the only one I can think of without admitting i was sloppy.
 
Not sure if One Step will ruin your beer but I would make sure your jugs are well marked in the future.. in a way that just grabbing the jug you can tell its not the one you want.
 
I keep Starsan & PBW solutions in 1 gallon SunnyD jugs. I have some 1 gallon Giant Eagle spring water jugs I left the labels on for getting local spring water at the source. Different jug types for different things like water & chemicals keep things visual.
 
One Step? Yea, that much might kill the yeast. If it does start to ferment, I'd let it run. One step is non toxic and will form Hydrogen peroxide that breaks down in to oxygen and water. I'm not sure what flavor effect it might have, but it won't hurt you if you let it go.
