Yep, my pale ale kicked 2 days ago. I have Jamil's Chocolate Hazelnut Porter in the kegerator, but it's pretty awful. I may have used too much extract, or the wrong kind/brand, but it really needs to be blended with another plain porter to be drinkable (IMO anyway).

I *think* I will have time this weekend to brew, so I need to get cracking on a recipe that can turn around pretty quick. I haven't done an IPA in a while and it's crossed my mind. It's also Brown Ale season. I have Founder's Breakfast Stout clone in secondary that can go into the keg soon, so that will help, but I need a pale beer to balance my taste buds.

Any suggestions? I am thinking about another 2-hearted clone, but I might throw some citra in there or something. (Got lots of citra!)

Centennial Blonde. Fast and tasty.

I do like that beer, but it may be a bit light for this time of year. I will be looking for it near springtime though!

I'm actually excited about lagers again. I had a few excellent lagers from pjjtuba this summer at NHC and it's raised my interest in trying them again. With a small box and a heat light I could ferment them easily using an STC-1000 in the garage.

But now I think I need some hops. I just know someone has the perfect recipe out there!

I don't know if it fits your criteria for a fall beer, but for showcasing hops I really like the grainbill from the Russian River Row 2 Hill 56 clone. I've been playing around with different hops, as well as the original single hop simcoe I've done centennial/simcoe, and simcoe/nelson so far. I think somke citra would go nicely. My versions have been in the 1.058-1.060 range.

Interesting. I was looking up some recipes on Red Rye ales, but this one looks pretty good too. And I think I have a few ounces of Simcoe that need drowning.

Drinking this beer right now and love the simcoe version. Second time brewing it.
How did you like the other hop versions you brewed compared to the simcoe?

Yeah brewed as is it's really good and seems very close to the original, but I thought mine could use more late hops. That's what I did with the other two versions, mixing 50/50 centennial in (then same with nelson) for a whirlpool and dryhop. The cent/simcoe was really yummy, the nelson was good too but turned out a a little fruity which tends to happen with me and nelson. I'll probably brew the all simcoe again and just up the late hops.

I'm leaning towards a red Rye IPA. I might modify that one recipe to make it red and a bit more complex. I only found 1 ounce of simcoe, but I got lots of Centennial and Cascade and Citra.

My wife works this saturday and I don't think we are going anywhere, so except for having to hang drywall and wire my mom's bathroom I am free. Oh and probably AFTER brewing I will have to clean the house in prep for the T-day gathering.

I forgot to see how much 2-row I had! I may have to make a run to an lhbs before I can brew!

Looking good. I subbed the 90 minute hops with Northern Brewer and subbed the 30 minute hops with Citra. I used the 1 ounce of Simcoe at 0 minutes and planned to use 2 ounces of Centennial for dry hop but I will likely change that up if I can order some more during fermentation, or if I take another look at my inventory and decide to mix in some citra/simcoe/chinook/whatever. I will most likely have Centennial in the dry hop, but I would like some pine aroma as well if possible.

Also planned to add 2 ounces of Roast Barley for the red color. I've never done it and I've always wanted a red beer. I'm not doing rye this time.

I just brewed this Session IPA and it went grain-to-glass in 1 week:

10 gallon batch, OG 1.049, 43 IBU:

19lb Pale Ale Malt
1lb Crystal 80

1.2oz Magnum 13% @60
3oz Zythos 9.4% @0
3oz Chinook 12.3% @0
10-minute hopstand after flameout before starting chiller.

Split into 2 buckets, each gets a packet of S-04.

Finished fermenting in 3 days at 1.014, cold crashed, kegged, force carbonated.

I ended up brewing a version of the hill56 clone. I had to sub some hops but I think I will like it just fine. Everything went great except I accidentally used Crystal 40 that I bought at the store instead of the 20 in the recipe. We'll see how it turns out. I should have read the recipe more carefully while brewing, but I just reached for the crystal that I bought eeven though I bought it just to have on hand.

Also my chiller hose was missing and it took me a few extra minutes (maybe 15...) before I found it. I nailed the preboil gravity and the post-boil gravity was only about 2 points off.

Had a pretty nice brewday if you don't include that fact that I set up a tv in the kitchen to watch the Lions while I brewed... :(
