Ok, I've been looking all over the intranets looking for a recipe of this one. I've seen a few but didn't know how close they would be. I've only had this brew once but it was amazing. I've got two hop schedules built to weigh my options on. Looking for any input as to which one you guys would lean towards. I plan on brewing this a couple times and trying to nail it down. I've also debated on using any dextrose in it as well. But I'm not sure if I want to try without it first then change some things up and add it in. I'll list the beer info below for those who haven't seen it.

From DC Brau:

"OTWOA is a single hop beer utilizing Falconers Flight. Brewed with just enough Pale malt, Cara-60, CaraPils and Malted wheat to carry the intense hop character onto the pallet.

At first glance, it has an orange hue in the glass with a viscus, rocky head that refuses to dissipate. Upon first sniff there are dominate aromas of citrus, white grapes and grapefruit with light bread and biscut notes. After the first sip we taste a mellow bitterness that only grows as more is consumed. Moderately carbonated, deceptively smooth, refreshingly dry and extremely heady for a beer at 9.2% ABV.

OTWOA exhibits all the necessary traits to be revered as a world class Imperial IPA."

Any pointers on the brews at all would be awesome. I've only been brewing hoppy beers for a short time now. So far they have been good but still lots of work to be done. I'm learning to not be afraid of adding more hops!

I'd skip the 5.2 stabilizer, it doesn't do what it claims and could cause problems. Better to start with RO water and build, or get a water report and adjust as needed.

This is an awesome beer and the recipes look good. I'd replace some of the base malt with cane sugar to reduce the grain bill and dry the beer a bit. Also I'd add some gypsum to get the sulfate up to around 300 and make the hops shine.

Awesome. Thank you! I usually add gypsum in my mash but didn't put it in there. I typically do 5.2 in the mash then add gypsum to the sparge water. I'm actually using a blend of spring and distilled water instead of my water as it has a lot of chemicals in it and I haven't had time to build a filter.

I may add in some dextrose as I have a ton of it lying around and reduce some of the base malt to have better attenuation like you suggested.

Ok. I've decided to go this route for the first time. I'll brew this after I get the other one I have for this weekend going. It may not even be close to the actual thing and I won't get another can for a while to compare probably but it should turn out as a tasty IIPA! Any other pointers are of course welcome as I won't be brewing it for a couple weeks.

The water will be a mix of spring and distilled water from Kroger. I'll add gypsum into the mash and the sparge water to help accentuate the hops.

So I brewed this up today and cannot wait to try it...sipping on the real deal now that the brew day is over...ahhhh what a delicious beer!

I changed up the recipe above a bit. I brewed 5.5G instead of my usual 10G as I want to give it a go and tweak before going large. My recipe is as follows:

11.00 g Gypsum (Calcium Sulfate) (Mash 60.0 mins) Water Agent 1 -
14 lbs Pale Malt (2 Row) US (2.0 SRM) Grain 2 75.2 %
2 lbs Wheat Malt, Bel (2.0 SRM) Grain 3 10.7 %
1 lbs Caramel/Crystal Malt - 60L (60.0 SRM) Grain 4 5.4 %
8.0 oz Acidulated (Weyermann) (1.8 SRM) Grain 5 2.7 %
8.0 oz Cara-Pils/Dextrine (2.0 SRM) Grain 6 2.7 %
2.00 oz Falconers Flight [10.00 %] - First Wort 90.0 min Hop 7 57.6 IBUs
10.0 oz Corn Sugar (Dextrose) (0.0 SRM) Sugar 8 3.4 %
2.00 oz Falconers Flight [10.00 %] - Boil 20.0 min Hop 9 29.7 IBUs
2.00 oz Falconers Flight [10.00 %] - Boil 15.0 min Hop 10 24.3 IBUs
2.00 oz Falconers Flight [10.00 %] - Boil 10.0 min Hop 11 17.8 IBUs
2.00 oz Falconers Flight [10.00 %] - Boil 5.0 min Hop 12 9.8 IBUs
2.00 oz Falconers Flight [10.00 %] - Steep/Whirlpool 0.0 min Hop 13 0.0 IBUs
2.0 pkg Safale American (DCL/Fermentis #US-05) [50.28 ml] Yeast 14 -
2.00 oz Falconers Flight [10.00 %] - Dry Hop 4.0 Days Hop 15 0.0 IBUs
2.00 oz Falconers Flight [10.00 %] - Dry Hop 4.0 Days Hop 16 0.0 IBUs

Smelled absolutely delicious as I put it into the fermenter. Hit every number on the nose...hoping this is even CLOSE to Wings!! Cheers!
