I brewed this View attachment ImageUploadedByHome Brew1438125442.749560.jpg about a month ago. It's nearly gone and is my favorite beer (so far). So I thought I'd share.
Saison Finale (3gal)
2.5lb light DME
1lb wheat DME
Steep 30min @ 155F:
8oz Caravienne
8oz Crystal 20
4oz Crystal Rye
.5oz of Perle @ 45min
1oz Hallertau @ @5min
.5oz of Saaz @ 5min
1oz fresh orange zest @ 10min
.5oz ground black pepper @ 10min
.5oz coriander @ 10min
Belle Saison yeast - 1pack, rehydrated, no starter.
2 days @ 60F, 5 days at 75-90 (Garage)
Bottled, chilled about 3 weeks.
OG: 1.060, FG: 1.009
Very spicy, peppery. A little clove, not much coriander, no banana. For my second (already done) I did 5 gal and kept 1lb of wheat, lowering the % to lessen clove flavor. Also increased orange, fresh cracked pepper, and subbed Goldings for the Saaz. It's unfinished but I might go back to Saaz and ground pepper - I think it lost too much spice.
