Help please, I made an orange mead at Christmas and all seems to be going well as mead is very clear. However there are bits of white goo floating around similar to a lava lamp. I need to rack again but any idea how to ensure all the goo settles on the bottom of the demijohn? I have finings and bentonite if that might help? I'd welcome comments?

Have you tried turning off the lamp? :p

Put it in a cold place and let it settle for a few days and rack. If the white stuff is moving around it has a density different than your mead and it'll either clump at the top or bottom.
 
Thanks, I may rack and get as much out as I can and then leave in the cellar (which is freezing).
