Hello All,
I have decided to try my hand at putting together a new recipe from scratch and would like to get some advice from the forum as I am relatively new to brewing. I went ahead and used BeerSmith to get a pretty good idea of the final color, ABV and IBUs and am pretty close to my target beers. However, as I have very little experience with partial mashing, and the grains that go with it, I am unsure if I will hit the taste for which I am shooting. I am trying for something that is close to a Sweetwater 420 or Sierra Nevada Pale Ale. I am open to suggestions so please let me know if what I have put together so far is heading in the right direction or way off course.

1 lbs - Munich Malt - 10L (10.0 SRM) - Grain
1 lbs - Vienna Malt (3.5 SRM) - Grain
8.0 oz - Cara-Pils/Dextrine (2.0 SRM) - Grain
8.0 oz - Caramel/Crystal Malt - 40L (40.0 SRM) - Grain

Mash Step Name: Description - Step Temp - Step Time
Protein Rest: Add 5.40 qt of water and heat to 122.0 for 30 min
Mash @ 152F: Heat to 152.0 F for 30 min

1 lbs 12.0 oz - Light Dry Extract (8.0 SRM) - Boil 60.0 mins
1.00 oz - Cascade [5.50 %] - Boil 60.0 mins
0.70 oz - Warrior [15.00 %] - Boil 60.0 mins
1.00 Items - Whirlfloc Tablet - Boil 15.0 mins
1 lbs - Extra Light Dry Extract - Boil 10.0 mins
1.00 oz - Cascade [5.50 %] - Boil 5.0 mins

This is the SNPA clone from from BYO:
Ingredients

1.8 lbs. (0.82 kg) Briess Light dried malt extract
4.0 lbs. (1.8 kg) Briess Light liquid malt extract (late addition)
1.0 lb. (0.45 kg) 2-row pale malt
1.0 lb. (0.45 kg) crystal malt (40 °L)
2.5 AAU Magnum hops (60 mins) (0.18 oz./5.1 g of 12% alpha acids)
4.8 AAU Perle hops (60 mins) (0.7 oz./19 g of 7% alpha acids)
5 AAU Cascade hops (15 mins) (1.0 oz./28 g of 5% alpha acids)
0.75 oz. (21 g) Cascade hops (0 mins)
0.75 oz. (21 g) whole Cascade hops (dry hop)
1 tsp Irish moss
Wyeast 1056 (American Ale) or White Labs WLP001 (California Ale) yeast (1.5 qt./1.5 L yeast starter)

Mash at 150 and don't do a protein rest, it's not needed for this kind of malt.
 
Why the extracts??

Because 3 pounds of grain isn't enough for a 5 gallon batch?


I didn't run this through any brewing software, but I think with .7 ounces of of warrior that this beer would be very bitter, and adding cascade at 60 minutes to it means WAY too much bittering.

As already mentioned, do NOT do a protein rest! You don't need it, and it's more harmful than helpful.

Your basic recipe is actually pretty good, so keep the grains the same and mash at 152.

The hops need adjusting, though.

Use the warrior to get to 20-25 IBUs with that one addition.

Use perle at 15 minutes (.5 ounces), or sub with cascade (which I like better but isn't a clone of SNPA then)

Use cascade at 5 minutes and 0 minutes, 1 ounce, for a nice hoppy nose and flavor.
