Hi, I just wanted to ask if it is safe to open the wine demijon while the wine is ageing. I usually open the demijon about twice a week to taste the wine and monitor the ageing progress. Can this thing harm the wine because of oxidization or any other harmful bactecria?
 
Twice a week seems somewhat excessive. What kind of wine is it? White wine takes 4-6 months, red wine usually needs a year or two. So leave it alone and come back to it a few months from now. The other issue is make sure the wine is topped up, don't leave a lot of headspace in the container.
 
Its red grape wine its topped up but i'll leave sit for a few months and then check it. Thanks for your advice.
