Hi all. I just brewed my second batch a few days ago. The first batch was an extract kit that I did a full boil on, and this last batch was all grain. I am using a turkey fryer, a 10 gallon cooler, an immersion chiller, and a pair of plastic pails.
Everything went well with this last batch, except I didn't get my water volumes quite right. I started with 5.75 gallons of wort and boiled off a lot more than I expected. At the end of the day I had 4 gallons in my ale pail instead of 5. This happened to me last time too, though not as severely -- I think I must have the burner cranked up too much.
This brew is based on the DFH 60 clone recipe from this forum, so I will need to dry hop soon. I can go buy a 5 gallon glass carboy for a secondary fermenter, but I will have a full gallon of headspace with this short batch.
Should I just dry hop in the primary? Go for the 5 gallon secondary and not worry about the head space? Find a 4 gallon carboy? Find something sterile that displaces a gallon and will fit through the neck of the fermenter?
