I purchased my first kegerator with two taps. Is it possible to enjoy from one tap but still carbonate another keg?

I ask because I have only one regulator that I can only set one pressure.

Sure. Tune your beer line to dispense at the same pressure that is required to achieve and maintain the desired carbonation level at your beer temperature (refer to this chart, and then this page), then you can use the second gas drop to do the "set and forget" carbonation on the second keg...

Absolutely. Ran mine like that for a couple years til I purchased a second tank/regulator setup for carbing
