I got my hands on Omega Yeast's All the Bretts. I do not regularly have access to liquid yeasts and have to order them. In the name of frugality, I am looking at how to best harvest this blend. I intend to co-pitch it in a saison during primary with WY3711. Can I make a larger starter with the brett and save half of it like i would for a typical Sacc strain? Should I bottle the beer and just harvest dregs and re-pitch in secondary? The downside of this would be the 3711 being mixed in, eliminating the option of using it as primary yeast for any non-saison.
 
This strain blend is wonderful as a primary strain. I would highly recommend propagating and banking some yeast for future use. I think OYL-218 is one of the most balanced Brettanomyces blends on the market, and will yield a complex palate of stone fruit when used in a 100% Brett beer. The only consideration you need to keep in mind is that it takes about 7 days to propagate a Brettanomyces starter, and another few days to cold crash and decant it. I've seen activity as soon as 72 hours, but high krausen usually takes a week to settle.
