Old yeast starter?

I made a larger starter (6 cups water/1.5 cup dme) with a vial if white labs 01. The yeast had been previously frozen :-( so I didn't know if the starter would even take off. I made the starter 7 days ago and didn't see an signs if fermentaton. I decided to just leave it and 2 days ago I looked and I could see activity and a layer of yeast at the bottom.

Would you guys still use this yeast?

If you're in doubt, you could always check the SG of the liquid in this starter and see if it fermented. If it's got a low SG, then it fermented.
 
As long as your sanitation was good, sitting out for 7 days isn't a problem. If it was, all of our beer would be spoiled. Your fermenting beer will sit at room temperature longer than that, and a starter is basically just a mini batch of beer.
 
Just smell it.
If it smells like wort, don't use it.
If it smells like beer, use it.
