Just bought some Nottingham Ale Yeast from a online vendor that is still selling them for 2 bucks a pop... The only problem is the manu. date is from Oct 2010 because the expiration date is Oct 2012... Any issues with using dry yeast that is approaching or over 1 year old? Thanks!!
 
I have a couple packs of S-04 with expiry date of 12/07 that a neighbor gave me. Any voices and opinions on its viability or usefullness?

Only one way to find out...make a starter. They haven't mutated into deadly bacteria. They will either be viable or not.

I just made a batch of Ó Flannagáin Standard Stout using Nottingham with the same expiration date. I fermented at 65F and the yeast performed flawlessly. I didn't even rehydrate it - I just dumped it in the carboy. I keep my dry yeast in the fridge door.
