I know during fermentation we are trying to keep bacteria etc out of the beer. I'm through active fermentation it's been about 5 days... Is it okay to take cap off carboy and take a whiff??

On a side note, how does mead taste? Is it any good?
 
If you get a full lungfull of CO2, you might regret it :) I tend to go into coughing fits when I get a sudden blast of CO2
 
I sniff my fermenters all the time. I usually just push in the lid of the bucket a bit to get a bubble after the active ferment is done, then sniff that. Otherwise, get one I those whipped cream dispenser things with the NO2 cartridges and do whippets... ;-)
 
To answer your mead question, the few I have made taste kind of like a riesling (a semi-sweet white wine), obviously with more of a honey taste. I also back-sweetened a few bottles from my last batch to make it more of a dessert wine.
 
Right on! I took a whiff and woke up a few hours later not knowing who i was or where i was. Im ok now.
