Just brewed an IPA with coconut in it. Really like the flavor but i get an oily feel in my mouth and tongue that is quite noticeable. I used unsweetened shredded coconut and it was added to the boil and fermentation. Anyone used coconut before? Wondering if the oily feel was from the boil or fermentation, or both? If i can pinpoint which one contributed more to the oily feel next batch i will not at it during that step.

As well, if anyone has encountered this oily feel from coconut, does it go away with time?

Thanks!

I have used coconut in secondary, never in the boil. I would imagine boiling the flakes released a lot of the coconut oil into your beer. When I prepped mine, I baked it and then dabbed some of the oil off with a paper towel before adding to secondary. Perhaps you could look into using some coconut extract next time?

I brewed a coconut porter that had toasted coconut added to the boil, primary, and the keg and didn't have any oily mouthfeel issues. Won a gold medal with that brew.

I make coconut cider and coconut wheat beer and only add the coconut into the secondary for the beer. I've never had any oily feel.
