Knudsen is such a good choice for juice! About 3.75 gallons in kegs? Make sure you purge everything after primary so it doesn't oxidize. Cherries and apples are horrendous for that.

Thank you for the reply! ... yeah, my sweet spot is about 3.75 gals per keg. The old man can't carry too much weight nowadays! :) And I have my newly arrived but old dip installed giving me about 5/8ths clearance above the bottom. Hopefully this will working beautifully. So I'm going to clean up another keg and do the trick where the fermenter purges the server with C02 during ferm. I've got to order the spunding valve thingy

What yeast are you using? At what temp?
I had ordered Nottingham and just threw that in because what the heck ... nothing doesn't ever come out great ... whatever's happening my ferms just come out better than I could ever buy ... I wonder why everything comes so good. I guess maybe I shouldn't look a gift horse :)
 
Nottingham, in my experience, is one of the best yeasts to throw at some apple juice, just not literally. It has the perfect qualifications for cider, everything about it. I couldn't agree with your choice more.
 
Off to the races almost immediately - lots of action. This will be only the second time to do this but running a slightly shortened dip in ferm and then having ferm purge serv and then doing the gravity switcharoo transfer to serv is a miracle to behold ...
