Back on 6/10 I brewed a Dale's Pale Ale clone extract from AHS. The OG was slightly higher than what the recipe said it would be (1.070 vs. 1.067). As of 6/24 I got a reading of 1.014 with the recipe stating that FG should be around 1.017. So I figured I was in good shape and had a beer that was about 7.3%, sweet! Anyway, it's been dry hopping for the past week. I took another reading yesterday that came out at 1.010 for an alcohol % of about 7.8. The beer has been in the primary the entire time fermenting around 68-70*.

It tastes delicious but with this being my first brew I was just curious as to why my gravity readings seem so far off from the recipe and if I should be concerned at all.
 
US-05 can easily get to 80% attenuation, your at about 84 which isn't unheard of. Did you read your hydrometer samples at 60*F, and if not did you calculate the difference? Are you sure your thermometer is reading correct? Also if the batch was for 5 gallons and you ended up with 4.5 gallons that could easily explain the higher OG, or AHS could have gave you a little extra extract in your kit too.
 
yeah the numbers are not so way off target that it's worth worrying about RDWHAHB. if it tastes funky and/or sour and the gravity keeps dropping you may have an infection but otherwise just enjoy the beer and don't worry about all those numbers so much ;)
 
Yeah like I said it tastes great, I can't wait to get it bottled and carbed! I'm just new to all this and have been taking in TONS of information from these forums. I forgot that I also got the alcohol boost with the kit, which was basically just some extra fermentables that I added during the boil, so maybe that has something to do with it as well. Unfortunately I can't RDWHAHB yet since this is my first batch! But I will have a craft brew instead :tank:
