Bière de Pieces #2

This is the second in our blended saison series, consisting or three different variants of blonde saison:

(1) Tradition -- Old World base saison with Saaz and Hallertau, fermented with a blend of Saccharomyces strains plus a bit of our house culture;

(2) Rafters -- Blonde saison brewed with aged whole leaf hops and fermented in oak with our house culture; and

(3) Saison Meer: Gin Barrel -- Blonde Saison using solely Midwestern ingredients fermented in local gin barrels with our house culture.

I'm quite excited that after 7 months of brewing, we finally have a diverse enough set of beers to really do a lot of blending, which is undoubtedly my favorite aspect of brewing.

Again....I could just phone first, but I'm lazy (but also willing to drive 45 minutes one way for Afterthought beer)...

Anyone know if there's stock left at Beer Cellar?

Definitely Amer: Denali & Mosaic and Meer: Rhubarb. Possible for Biere de Pieces 2 and Meer: Gin Barrel & Dandelion as well. Farmhouse Mild, Petit Meer, and Tradition were all pretty low the last time I was there, though I think they still have some bottles of those in the cooler for consumption at the bar.

If you want to be sure, would definitely recommend calling. You can see the shelf with all the Afterthought stuff from the register/phone, so it's an easy response for whoever is there at the time.

Really annoyed that the snow-slowed travel times prevented the lightning-strike visit I had planned to Glen Ellyn yesterday. I had almost no wiggle room between errands and having to pick the kid up from school by 3:30. Hope to have another free day soon to make it out!

Everything except Farmhouse Mild and Tradition are still available to go.

Drank an Afterthought Saison Meer Rhubarb yesterday evening.

Light lemon acidity, earthy and black pepper like phenolics, tartness from the rhubarb, dry finish and nice carbonation. Head retention fades to a small perfectly white ring on the outside, and pours crystal clear.

I did get a sulfur like aroma when it was cold and freshly opened, so I only poured about half at first. When I went back for the 2nd half about a half hour later that aroma had off gassed completely. Sure I could have sped that up by pouring vigorously or swirling it in the glass aggressively, but the patient approach worked just fine.

Afterthought Brewing Company Saison Meer: Gin Barrel Aged with Dandelions

So this might be my favorite commercial release from Aftherthought so far. Huge floral / citrusy aroma and flavor that I have to assume is some combination of the dandelions / hopping / yeast esters and gin barrel coming together to create a wonderful character. Finishes crisp and dry with a really light refreshing acidity, lively carbonation, just about perfect. Totally different than Hill Farmstead Vera Mae or Fantome Pissenlit which I believe are the only two other saisons with dandelions I've had before this one.

Three new bottles (details below) now available at The Beer Cellar (Glen Ellyn), plus Bière de Pieces #4 is currently on draft!

Bière de Pieces #3: Blend of Before the Birds, Saison Meer: Gin Barrel, Saison Meer, and a version of Saison Meer fermented with dandelion honey from Lombard. Wood and earth up front leading into notes fruit skin with light gin character as it warms. Mild acidity through the finish.

Bière de Pieces #4: Blend of Saison Meer: Gin Barrel, Saison Avec: Lemon Guava, and Rafters. Lemon guava and a bit of extra citrus rind followed up with a lemonade-like tartness.

Saison Avec: Gin Barrel & Yuzu. Citrusy, floral yuzu and light acidity up front, giving way to the underlying gin-barrel character.

As Gonzoillini said, Gin Barrel & Dandelions is out of this world. I've also had Saison Meer: Rhubarb, Saison Meer: Dandelion, Petit Meer and Gin Barrel & Yuzu in the last couple of weeks. All quite good.

Just picked up BdP #3, #4 and Gin Barrel with Red Currants. Can't wait to try them.

Yesterday, Beer Cellar had all of the beers mentioned above except Saison Meer: Dandelion & Gin Barrel & Dandelions, plus BdP #2, Saison Amer with Mosaic & Denali.

Saison Meer: Gin and Red Currants was awesome. Nice balance with acidity and dryness from the Currant, awesome mouthfeel, smooth bread-y and some slight fruitiness. You pick up a slight hint of the gin barrel with a bit of that juniper booze prickliness. A good example of balanced restraint.

Plenty in store for in 2018. I recently pulled some Saison Meer aside to experiment with pawpaw pulp, red currants, black currants, and purple gooseberries.

I also recently bottled Saison Meer and Saison Avec: Passion Fruit, so be on the look out for those in late January or early February.

Finally, a little over a week ago I brewed a batch with spruce tips and the beer is fermenting away in oak. The aroma coming off the boil on that one was absolutely incredible.
