Has anyone had any off flavours with mangos, I have a peach mango mead going right now and I left the skin on about 20% of the mango slices, the rest are just the mango meat. Does anyone have any experience on using mangos? should I remove all of the skin or add more skin?
 
I'd remove it myself.
I don't know anyone who eats mango skins. They grow here and the one I did bite into years ago tasted horrible. I always skin them since. I love the flavor of the fruit.
