I brewed a Baltic Porter five (5) days ago. Air lock activity slowed significantly today so I took a sample to check gravity and taste. OG was 1.090 - gravity today was 1.057, but the flavor seemed way off. Very dry. Not completely green apple and not really puckering, but both sorta. Here are some pertinent facts.
- New burner and post boil volume was off and OG was 1.103. Used Beersmith for dilution and added 2 quarts of filtered water to the fermenter, which corrected my volume and lowered my gravity (desired) to 1.090 (yea, i know. A bit high for a Porter)
- Pretty standard grain bill with Fuggle Hops
- Mashed at 157degs (wanted 154) for 60mins
- Fly sparged at a flow rate of 1qt per minute @ 172degs
- Pitched 2 packs of US-04 (Hydrated properly)
- Fermented in temp controlled Keezer at 62degs with blow off tube
- Sanitization consistent throughout the brew day
- I roused my beer to keep yeast in suspension yesterday - perhaps a bit vigorously. Is this my problem? I had one heck of a thick dark krausen all the way to the neck of the fermenter. Did that brown clinging gunk ruin my beer?
I am really hoping this is just a case of "Green" Beer and it just needs to finish fermenting, but never had this taste before. Then again, never did a beer this high in gravity. Fire for effect.
