Odd question

Scenario -

After boiling 2 gallons of water, I turn off the heat and add one can of extract. Even though the extract has been warmed in the can, it takes time for the wort to come back to a boil.

Do I start the hops schedule when the extract goes in to the pre boiled water, or when it actually returns to a rolling boil?

I'm thinking I wait until it comes back to a boil, but I just need to verify that to ease my mind.

Wait till you hit your hot break. A buch of crap will boil to the top and then add your hops and go from there.

When it returns to a boil. A 60 minute addition should be boiled for 60 minutes.

It's one of the reasons I don't like late extract addition, personally, is that it can throw off your hop scheduling, but there are plenty of reasons to like that method, and that's not your question!

+1 and be careful when you add your hops....You WILL boil over....so be ready with a spoon to stir like mad and hope for the best.
