Hi guys, im generally a BIAB brewer. I bought 4 pounds of light dme a couple of months ago for making starters for yeast harvesting, but I ended up never using it. lhbs is about an hour away. So im looking to see if I can do anything with what I have. I like light beers like the triple hopped miller lite recipe, so I won't mind the low gravity with 4lbs of dme.
I have .5 oz of galaxy, 1oz of citra, and 1 oz of el dorado. Have a packet of Nottingham to use.
So any suggestions as to how to use what I have? I wana keep bitterness closer to about 20-25 ibus, and add some dry hop to try and clear out some of my supply.
I also have a container of steel cut oats. Wondering if I can do anything with those.
I was thinking of maybe something like this:
5 gallon batch
4lbs light DME
1/4-1/2lb of steel cut oats mashed at 145
.25 oz galaxy FWH
.25 citra at 25 minutes
.25 citra at 5 minutes
1 oz el dorado dry hop
Packet of Nottingham yeast

I have no idea what the oatmeal will do for taste? Anybody have some input? Will this taste like puke? Should I leave out the oats and just keep moving with rest of the recipe?
Any changes you would suggest?

If you want, and really like, light beers I would leave out the oats.

I like simplicity and I would add all the hops before the boil and boil them+DME for 15 min.
I have done quite a few of these and they have ranged from good to great.

Search for "15 min pale ale" on youtube and you'll see a few Basic Brewing videos as reference.
 
Steel cut oats have not gone through the steaming and rolling of oatmeal. Since they have no disatatic power of themselves they would only add starch to your beer. If you want to get the mouthfeel of an oatmeal beer you would cook them first, then add them to your wort. I think the best use of them would be to cook and eat them.
 
Oats have no diastatic power, so mashing will do nothing ........ well maybe add some starch and I don't know what else.

Even if you add some grain to get conversion, you need to gelatanize the oats first to allow the enzymes to get to the startches to convert to sugar. You really should be using rolled oats (the rolling process heats the grains and converts the starches). Rolled oats don't have any enzymes either and need other grain to convert.

4 lbs of DME in 5 gallons will get you a 1.036 wort.
 
Thanks everyone. I still havent done anything with the DME. I didn't realize rolled outs and steel cut were different. Really wasn't looking to obtain any gravity points with the oatmeal, just thought that 4lbs of light DME by it self might be pretty flat. Ill probably just stick with the DME by it self and go with something like the hop schedule like I described above.
Any other suggestions with ingredients that could be found round the home though? Do honey or agave have any affect on flavor? I know they'll raise my final gravity and alcohol content.

For a light beer as you're doing you may want to consider light Belgian candy sugar. I've no personal experience with agave but if you use an aromatic honey (4-8oz) there may be more flavors and aromatics to be noticed in light styles.
 
Thanks all for the replies. I ended up getting to the brew store this weekend. I picked up ingredients for a mesquite smoked wheat beer and for kona big wave clone. Also got an oz of half price wakatu hops and 1 pound of amber DME.
I put the all grain recipes away and used the 4 pounds of light extract and the one pound of amber extract to try and do a quick brew that night. Found out I didn't have citra left, but had some el dorado left. Ended up doing .25 oz galaxy fwh, .25oz el dorado at 20 and 5 minutes. Let chill over night and got it fermenting with US-05. I might dry hop with the wakatu or save the wakatu for the big wave clone.
