M brewing a porter and wondering what others have experienced with adding oak and or bourbon to either the secondary fermentation or the bottling. I guess I could throw oak cubes into the carboy or I could put bourbon or even oak soaked bourbon in the bottom of bottles. Do you know how much for each?

for a decent flavor, soak your oak in a jar with 4-6 oz bourbon for about a week or longer. strain out the oak & save the bourbon in the jar. add the chips/cubes to the end of primary or, as I prefer, to bulk age. then if there isn't enough bourbon flavor at bottling time you can add what you have in the jar to your bottling bucket.

I add oak chips to about 6 oz what ever spirit I want to impart on brew day and set it aside. I like to add the chips to bulk age (secondary). I add the spirit at bottling to taste.

Thanks for the helpful reply. I soaked some oak cubes in Bulliet Bourbon for about a week and dropped them in the secondary fermenter this morning. I'll move to bottling after Thanksgiving. Can't wait!
