I have two carboys with an IPA bubbling away that used Danstar Nottingham. In a week or so I'm planning to brew and would like to pitch something on top of those nice Nottingham yeast cakes. I was thinking of something nice and big to take advantage of all those healthy yeasties. Any suggestions? I was thinking I could possibly try out parti-gyle beers?
 
Mmmm. I might have to give that a go. The IPA has stopped bubbling. Might wait until Friday and do this up. How long did you age it before all the flavors rounded out?

It take a while, I had a bottle at 3 months and was pretty good. It is better now at 9 months though.
