not getting the fg I wanted.

I brewed a belgian quad from a recipe that I've brewed before. It's supposed to have an og about 1.102 (I got 1.096) and a final gravity of 1.025. I got 1.030 after two weeks in the primary, checked it again after three weeks and it's still at 1.030. I followed the recipe with an addition of 1oz bitter orange peel and 2lbs of orange blossom honey (honey added after boil). Could the addition of the honey be the reason I didn't hit the fg?

Try raising your ferment temp up some.. see if that will help restart your yeast activity, help wake them up..
 
1. extract or all grain? if all grain, mash at a lower temp

2. what yeast are you using? try a yeast with a higher flocculation
 
no, the honey shouldn't have affected it, if anything, it should dry the beer out a little more.

if you were "shooting" for a FG of about 1.025, i would think 1.030 is close enough. but yeah, more info would be useful.
 
I used Belgian Strong (wyeast 1388).
Extract with specialty grains / mini mash of 3 gals @150 -155 for 45 mins.
60 min boil.
I've already transfered to a secondary, and I'm toiling with the idea of adding some yeast back into the sec fermenter that I harvested from the primary and threw into a stater batch.
Any comment on that idea???
 
i vote no in regards to adding yeast to the secondary. if the hydrometer readings are not changing then adding more of the same yeast will probably not change the FG one bit. if the hydrometer readings are still changing then you should not have racked to secondary yet.

if you are THAT concerned with your FG then you should add a different kind of yeast with a higher flocculation. don't be concerned. just drink it and enjoy it.
