Hello all. Jeff from the North Shore here.

After lurking here for a while, I finally had my first brew day yesterday. I brewed a Fat Tire clone from a Midwest kit, partial grain with LME, full boil, Wyeast liquid yeast. It is sitting now in a 6.5 gal bucket with an airstop, bubbling away, in a stall shower in a bathroom that I am keeping at 65deg F. If I can show the discipline, I plan on leaving it in the primary for 3-4 weeks, bottling in 22 oz. bottles, and waiting the 3 weeks for carbonation time. OK, perhaps I will check one after 2 weeks in the name of science.

Regardless of the outcome this time, many thanks for all of the great knowledge shared here.
 
Welcome to the boards Jeff. Congrats on the Fat Tire, I hope that it comes out well for you. There are some good groups of guys in the area on the boards that have brewing get togethers, check them out in the local gatherings section. Kiaser is having one in 3 weeks.
 
I just took a hydrometer reading on the Midwest Fat Tire clone after 13 days in the primary. Down to 1.01, which should be final gravity. Pretty tasty, too. I still plan on bottling after 3 or 4 weeks in primary, depending upon which day is more convenient for bottling day.

I also made up a batch of Ed Wort's Apfelwein in a 5 gallon Better Bottle today. Very simple, very easy.

Lastly, I have a 6.5 gallon Better Bottle and a Midwest Dunkelweizen kit. Perhaps I will have to brew this up next weekend and bottle the Fat Tire the following one.

Who said an old dog cannot learn some new tricks, lol.
 
We bottled the Fat Tire clone last night, after 25 days in primary. The process went fairly smoothly, although I suspect it will be easier the next time, given the experience curve. I do need to improve my skill in siphoning the beer off of the trub while in the bucket. I left more beer than I would have liked, as it started to get fairly sediment-laden. Perhaps it will be easier from a carboy, given the additional visibility. Any words of wisdom here?
 
I have a business trip in August outside of Boston. It should be well aged by then right!
 
Yes, certainly aged by August and most likely gone. I have quite a few people who are interested in trying out the brew. I will share it if it is good, but if it turns out poorly then it is all mine, and the knowledge stays with me.
