Noob Brewer Va Beach..Mead and Hard Cider

I'm starting up the hobby of home brewing. I've ordered some stuff and waiting for it's arrivial. Tomorrow I plan to make 2 gallons, 1 gallon of mead and 1 gallon of hard cider. Any suggestions or help would be greatly appreciated. I also have a 5 gallon carboy on the way I would like to find a good mead to put it in..again any suggestions on ingredients for a good mead would be greatly appreciated for the 5 gallon. I want to find something to allow a long ferment 6 months or longer. What type of yeast is best what kind of fruit to put in for a good flavored mead..etc..
