My next batch I want to try is the Victory and chaos IPA from John's palmer book.

I found all the ingredient but my local shop only has CRYSTAL 80L instead of CRYSTAL 20L (0.5LBS)

Would that cause a big problem ?

thanks

It won't be the same beer, if all they have is Caramel/Crystal 80 then I'd find another LHBS or order online. You'll get a different flavor/color from the 80L than you will from the 20L.

It'll still make beer, but not the one in the book.

I talked to my home brew store about it.. they said since it was only 0.5 Lbs using 20 or 80 Crystal wouldn't make that much of a difference. There rest is 8 pounds of LME Pale.

I'm not sure what do think anymore.

Big difference between the 20L you're saying, and the 120L the recipe calls for. I'm fairly new, but 80 instead of 120 wouldn't be that major of deal.

With the 20L you're at 4.9SRM, with the 80L you're at 8.1SRM, with 120L you're at 9.9SRM. And that's just color, not flavor...

thanks for the info. I have the 3rd edition of the book and the recipe call for 20L Crystal.

Yeah, that's the edition I have too. Does the LHBS have ANY crystal/caramel malt besides the 80L? You could sub 10L, or even 40L, but I wouldn't go as high as 80L unless I absolutely had no choice. It's an IPA, and 80L would be odd in it. If you have no choice, you could reduce the crystal, and use the 80L but only .25 pounds of it and it still won't be the same, but it would be a bit closer in color (and possibly flavor) than .5 pound.

20L caramel malt is light, with a caramel sweetness. 80L is dark, with a bittersweet caramel sweetness. Definitely very different!

This is what they have

Canada Malting 6 ROW PALE MALT (Lovibond 1.5 - 1.9)

Any suggestions ? I know I could do the batch all Extract but really wanted to try steeping.

Thanks again
Eric

oh, the carastan is the closest. You could sub that without much difference in the final product! I think the light carastan is around 17L, and British so it's a bit different, but it's not too awfully far from the 20L.

lucky me, I found a brew shop not too far from my house with a very goo selection of hops, malts, extract and everything I needed. Talked to them this morning and they have everything is stock with the 20L and they seems very knowledgable.

Problem solved. Tonight I bottle my first batch of cincinnati Pale Ale.
