I'm new to home brewing in general and had a question involving preservatives.
I was at a local orchard today and bought some raw unfiltered cider from their cider mill store. It tastes amazing and they sell it in 1 gallon glass carboys so it's just begging to get a stopper and airlock thrown on it. However, on the label it says "Contains less than 1/10th of a percent of sodium benzoate". Can I not ferment this? I tried searching for similar topics but most were for commercial ciders that contained sodium benzoate. The way they word it on the label kind of lead me to believe it was a very small amount and maybe it would be alright, the guy that sold it to me said it would only last 2 weeks refrigerated so it doesn't seem very highly preserved. Anyway what do you think, I'm curious.
