Greetings! I couldn't help but join in and say hi!

I'm pretty much a newcomer to brewing in general, but I've already found this site to be a huge asset to learning the craft.

I'm a pretty active member of the Society for Creative Anachronism (or SCA, for short), which is an educational organization which researches and recreates the Middle Ages. A couple of my SCA friends introduced me to the basics of brewing meads and wines, and they were pretty excited when I took an interest in learning more about brewing ales.

Admittedly, I'm not really a drinker, so I have more of a keen interest in low-alcohol (or even no-alcohol) beers, as well as homebrewed, bottle-conditioned sodas. In fact, I have a batch of extract-based root beer I'll be working on over the weekend.

I look forward to continuing to pick the community's collective brain for advice and information as I go. :)
 
Welcome! The history of fermentation goes way back and is an interesting topic for sure. Now that many of us use temperature controllers to ensure the best environments for yeasts to work, it is hard to envision how fermented products tasted back a thousand years ago.

Good thing about home brewing is we have pretty good control over the alcohol content our end product will contain. Low alcohol beers are certainly within your reach. Another product I love is Kombucha Tea...no alcohol, but fun to make and drink.
