Hello, thought i'd introduce myself. I've been reading on here for a few weeks but just made an account. Started brewing a couple weeks ago as well with a couple Ale Pails and a glass carboy. So far i've made a True Brew Steam Beer kit which is currently 4 days into bottle conditioning. Tasted some when I bottled it and seemed great. I was a little worried since I steeped the steeping grains way too hot (Like over 180*) but I cant taste any strong tanniny flavors.
Also have an experiment for a summery ale in the fermentor. Decided to get a little more creative and started with a Midwest Supply Amber Ale kit with white labs american ale liquid yeast. Added 2g of crushed grains of paradise and substituted half the Hallertau bittering hops with some whole leaf Cascade. Also steeped some heather in with the steeping grains, not sure if I used enough to actually taste though, only used a small handful. Anxious to see how this beer will turn out.
I think i'm hooked, I've already planned out my third beer and I've only had the kit for 2 weeks and haven't even had a bottle of my beer yet. I'd like to start all grain but I think ill do a few more batches with just extract first before I jump into that.
