I want to start All grain Brewing but i need a setup. I would like to use the fly-sparge system but i have a few questions. Can you fly sparge with a herms system, or something similar. Im not sure exactly how the herms system works but it seems like your fly sparging with wort.
Is it better to use gravity or pump the water/wort?
Any other info would be greatly appreciated.

HERMS is a method of mash temp maintenance and has nothing to do with sparging.Wort is cycled from the mash tun through a coil in your liquor tank where it receives a little heat and goes back to the mash. Then when the mash is over, the hot liquor in the HLT is moved to the MLT for sparging.
