Been lurking around for a couple months now, making the most of the forum's collective wisdom, especially in the area of sanitation.
I've brewed two kit beers now, an IPA and a Belgian tripel. I'm letting the tripel rest for several months (well, trying to..."testing" a bottle every other week or so). It's clarifying nicely and the banana flavor seems to be mellowing.
The IPA is decidedly hopped up, stronger/bitterer than store bought, but maybe that's because it's fresher...? It's not clarifying as quickly as the tripel. Possible contamination? No off taste, as far as I can tell.
No second fermentation for either of these brews, but I'll probably try it for whatever I select next time (which will be very soon).
