New cider any thoughts?

Today im starting a new cider. I plan on doing a 3 gallon batch.
2 1/2 gallons of cider ( 3 different sources )
32 ounces of cherry juice Trader Joe's brand
1 cup of morello cherries with syrup
Wyeast 3068
Plus 2 tblspoons nutrient

Going to keep fermenting temp @ 68 (hopefully) could be 70.
Keep in primary for 14 days, rack to secondary with another 32 ounces of cherry juice for 3 weeks add pectic enzyme to clear, bottle condition and pasteurize.

Any thoughts about this would be awesome.
 
Add your pectic enzyme a day before pitching yeast as it is somewhat inhibited by the presence of alcohol.
 
Bananas and just the slightest hint of apples. I have tried a few and they definitely have been improving. Didn't add enough sugar to carb up quickly but they are starting to get some now. Few more weeks. I add about a half a pack of truvia to sweeten it a bit. Would make it again with more priming sugar and back sweeten with some concentrate. It's almost a hefecider, or an appleweisen.
