What's a yeast that remains neutral at 69-71 degrees? I usually don't brew in warmer months and would like to do some lighter ales through the next few months when it becomes more difficult to keep the temps low in brew closet. I know US-05 is neutral at temps closer to 60, but I have never tried it as high as 70 and have heard it can get a little funky at higher temps. I also know that Nottingham is pretty neutral, but I have never used it at as high as 70. Are these good to go this high or are the any other neutral yeast that will stay neutral this high? Thanks.
