Just made 2.5 gal batch using nestle quick. Wort smelled awesome, just bubbling away. Will post recipe if successful.
 
I steeped some English choc grain malt, used plain malt, lactose fermentable, 16oz nestle quick. Trying coopers yeast, citra hops at end of boil. Will post my results:D 2.5 gal batch
 
I assume you used Nesquik powder, which is mostly sugar, which will ferment out, lower your final gravity, dry the beer out and add alcohol. Along with some other stuff you probably don't want in your beer (emulsifiers, etc). If you want chocolate flavor, you should have added 100% chocolate, like bakers chocolate powder or bars.
 
Your right on that, just going to see how it turns out. I did hershey syrup stout, tasted good, little sweet, probably should have did yeast starter
 
I have doing experiments since being told how to brew. I consider it fascinating and frankensteinish.
 
More basic ingredients, like cocoa, will allow you to control the quality better. Happy experimenting!
