Going to brew up a saison, partial mini mash with a full 5.5 gal boil. I'm going to use 3711 French Saison yeast and I hear it is a beast. I'm looking for 7-7.5% abv and considering how efficent this yeast is I think I need to cut back on my fermentables a bit but not exactly sure where I can do that without hurting the structure or color of the beer.
Any suggestions on what I can cut back on?
