Hey guys I been reading the forums for months this is my first post. I have brewed this recipe a few times everyone likes it, but I feel it could use something more. Please let me know what you guys think.



6.6lbs Wheat liquid extract

.50lbs caramel malt 10 steep for 30 mins plus zest from 4 oranges

1oz citra hops 60mins

1oz citra hops 30mins

1oz citra hops 10mins

Belgian wit II yeast

1oz sweet orange peel

1oz bitter orange peel both at 30 mins

1 oz tangerine peel at 10 mins



I know that's a lot of citra hops but I like citra hops and think it works well.
 
That is a lot of hops for this style... I like Citra hops too, but this style is supposed to be about letting the yeast & the spices shine, you want low alpha hops probably a noble variety, Hallertau is a good choice.

A lot of the citrus flavor in this style comes from the coriander not the orange peel Indian coriander is what you want you can get it at an Indian grocery store that's where I got mine a huge bag CHEAP.

That is a lot of orange peel too....


Have you ever done a partial mash before? You can get some more haze to your beer and get some of your fermentable sugar from doing a PM. It isn't much harder than the Crystal you are steeping and in fact you could omit the Crystal as it is out of style for a Witbier anyway.

You just need some 2-Row, some Flaked Wheat, & maybe some Flaked Oats. You just need to increase the time of your steep to 60 min & control your temperature I'd say around 150 should be good, & maybe sparge the bag with a small amount of water. Temperature plays a key role since you are relying on enzymes in the grain to convert starches into some of the sugar the yeast will ferment.

4# Wheat LME
2.5# 2Row-Pale
2.5# Flaked Wheat
.5# Flaked Oats

1oz Hallertau 4.5%aa (60min)
.5oz Bitter Orange Peel (5min)
.35oz Indian Coriander (crushed) (5min)

WLP400

Mash Grain @ 150 for 60 min
