Need help identifying surface material

Can anyone help me identify this material that has appeared on the surface of my wine?

It seems very crystalline in structure and has slowly increased in presence over the past week or so.

Background information:
Wine is Pinot Gris made from grapes harvested at an experimental vineyard
De-stemmed and cold soaked 4 hours prior to pressing
Fermentation stopped over 3 weeks ago.
Wine has been sulphated twice (maintaining 30ppm)
Vessels are purged of o2 prior to fill and anytime after opening seal (with co2)
Yes there is a fair amount of head space, but I can't top up the vessels as the wine is intended for experimental purposes (marbles aren't a bad idea, but I was hoping purging would have a similar effect)
pH is between 3.2 and 3.4
There are a total of 20 3gal carboys, 7 of which seem to have this material on the surface

I might be wine diamonds if so it should drop to the bottom when it gets cold.
 
Took a look under a microscope, and it seems that this is the case.

I have never been motivated enough to buy a microscope to look at floaties.

Maybe I'm missing out on a new hobby.
