A few months ago I whipped up a simple batch of pineapple wine:

* 12 cans of Pineapple Juice Concentrate
* 500g Cane Sugar
* WC-1118 Wine Yeast

It fermented like mad, was moved into a secondary after 2 weeks and bottled 2 weeks later. When I was bottling it I immediately noticed that it reeked of cheese and rhino farts.

I gave it over a month before sampling the first bottle, which was promptly poured down the sink. Butter. Heavy butter flavours. Bad news. But I am a man of patience, so I waited for another 2 months before trying another. Same awful flavour.

In its current form it is undrinkable. I even tried mixing it to see if I could mask that wretchedly sickening butter flavour. No go.

Is it possible to wait out this nasty flavour? I know that a bad brew can become okay can become great if patience is exercised, but some reading about the 'butter' flavour on this website would lead me to think otherwise.

If not I will pour this down the sink and chalk it up to a lose. I want those bottles back if I am not going to be drinking it.

Advice?

I did a batch of that before... best thing I could say is that it tasted like razorblades. I waited and waited and eventually pitched the whole 5 gallons. Quite a let down.

I made a batch and declared it the worst stuff I had ever tried to drink.. left it set untouched for months. Opened a bottle the other day and it REALLY has changed a lot. IF it continues to improve I should hve a nice wine within the next 12 months or so. I say unless you need the bottles let it set and forget about it.

I have to agree with the last two posts; This is the worst thing I have ever made.

But if time really heals all nasty brews... It may be worth waiting for. I was going to pour it all down the toilet this week to get my bottles back, but I managed to score 48 pristine wine bottles that can be used in their place.

I will continue to wait and update on any improvements.

This needs an update - I cracked another bottle of this today and the improvements are mind boggling. The sickening butter flavour has mellowed out a lot and it was actually drinkable. I could actually taste pineapple too! That is just a little under 4 months after bottling.

I am going to wait another couple months before trying the next one as I can only imagine its going to get better.

The trick is to stick it somewhere where you won't go/look/think about for a few months - a year. I have a gallon of Apfelwein under the house going on a year. I've never aged anything this long so I can't wait to try it.
