I love CDAs, and have brewed 16 batches before today yet have never brewed a CDA for whatever reason. Well I bucked that trend tonight and am now in mid boil on my first CDA. I'm stoked for this batch to be completed. It's not my recipe, but I'd like to know what you guys think of it. This is a 5 gal batch.

7 lbs. light DME
1 lb Crystal malt 60L
.25 lbs. roasted barley
.75 lbs. carastan malt
.25 lbs. chocolate
.5 oz. centennial (60 min)
1 oz. Millennium (60 min)
.5 oz. Cascade (15 min)
.5 oz. Amarillo (15 min)
.5 oz. Amarillo (5 min)
.5 oz. Simcoe (5 min)
1.5 oz. Amarillo (dry hop)

I plan on doing a 3 week primary and a 1 week secondary w/ dry hops. What do you guys think? Does this seem like it will be a pretty good CDA?
 
I'd say add more hops... all around, early in the boil, whirlpool and dry hop.
This thing should be hop foward not stout like in flavor...
Many people shoot for > 100IBUs in CDAs

Add some more cascade; it is a Cascadian Dark Ale after all :)
 
yeh let me know how it turns out...kinda wanted to brew one of these for the heck of it...I love carastan...I like the hop schedule too
 
Hmmmm, maybe my Black IPA is really a CDA. This is for a 1 gallon brew:

BTW, this one turned out OK. It was more brown than black. It wasn't spectacular by any means, but it wasn't bad either.

I however have done an all grain American Style Black Ale (Technically the name of the style according to the BJCP) which is pretty damn good. I believe I got this recipe from this site somewhere, but I forget where. If this is your recipe please let me know and I'll happily give credit where it's due. Also, I know I'm posting an AG recipe in extract brewing. For that I apologize, but I wanted to update the thread. It disappoints me when I see a thread with no resolution.

13 lbs. 2 row barley
1 lb. chocolate malt
1 lb. brown malt
8 oz. crystal 60

Mash @ 152°F for 60 mins

1 oz. simcoe 60 mins
1 oz. cascade 15 mins
1 oz. citra 10 mins
1 oz. simcoe 5 mins
.5 oz. simcoe 1 min
.5 oz. citra 1 min
.5 oz. cascade 1 min
1.5 oz. cascade dry hop 7 days
1.5 oz. citra dry hop 7 days

OG 1.062
FG 1.012
%ABV 6.5%

Damn tasty. A few tweaks and it will become one of my regular brews.
 
Like I stated in my last post, that beer was good, but nothing really stood out to me. This was 1 1/2 years ago and while I was still a bit new to brewing, so I don't remember why it was just a little better than good. I do remember though that the beer could have been much better. Sorry I can't be of more help.
