For my first recipe, I'm going for something along the lines of Rogue's Brutal Bitter. I'm not going for an exact clone. I just want to use the same ingredients and end up with a decent beer. How does it look? Can anybody suggest some tweaks/overhauls?

7.00 lb Amber Liquid Extract (12.5 SRM) Extract 77.78 %
1.00 lb Pale Malt, Maris Otter (3.0 SRM) Grain 11.11 %
0.50 lb Caravienne Malt (22.0 SRM) Grain 5.56 %
0.50 lb Cara Wheat (9.0 SRM) Grain 5.56 %
3.00 oz Crystal [4.60 %] (60 min) Hops 46.0 IBU
2.00 oz Crystal [3.50 %] (30 min) Hops 17.9 IBU
0.50 oz Crystal [3.50 %] (5 min) Hops 1.2 IBU
0.50 oz Crystal [3.50 %] (0 min) Hops -
Rogue's Pacman Yeast

Est Final Gravity: 1.015

I plan on throwing the grains in a cold crockpot and setting it to "keep warm" which should eventually bring it up to 160 F max.




Here's the Brutal Bitter specs:
Malts: 100% Floor-malted Maris Otter, Cara Vienna, Cara Wheat.
Hops: Crystal.
Yeast & Water: Rogue's Pacman Yeast & Free Range Coastal Water.

Well, I'd use light malt extract, instead of amber. the amber malt has crystal and/or other things in it, and I think it'd be kind of sweet and dark.

For your partial mash, I'd add another pound of MO malt, and make sure not to add it to your crockpot until it was at about 165 degrees. Then add the grain bag and mash for 45 minutes at least. You want the mash to be at 150-154 for the time. I'd suggest using 1.5 quarts per pound of grain.
